Method denoted in paper:
hydroxytyrosol [2-(3,4-dihydroxyphenyl)-ethanol, C8H10O3, CAS RN: 10597-60-1, 1OH] were purchased from and TCI-Europe-NV, samples were carefully dried under vacuum and used without further purification.
Electrospray ionization/ion trap mass spectroscopy studies (ESI/IT MS; LCQ-DecaXP LC−MS system, ThermoFinnigan) were performed for the hydroxytyrosol, confirming its molecular weight according to what was expected.
From the thermoanalysis study of the samples by DSC (PerkinElmer Pyris 1) over the temperature ranges considered. no phase transitions were observed. Molar heat capacities at constant pressure were also experimentally determined by DSC, following the methodology “scanning method” previously described in the literature.

DSC was also used for controlling the thermal stability and measuring the heat capacities of samples studied, which were weighed (2-5mg) with a Mettler AT21 microbalance (± 1 µg) and hermetically sealed in aluminum pans. The corresponding thermograms were recorded with a heating rate of 0.17 K·s-1. The molar heat capacities at constant pressure, were obtained following the methodology (“scanning method”) previously described in the literature, using synthetic sapphire (α-aluminium oxide) as reference material.
